Easy Slow Cooker Curry
- 4 chicken breast, boneless and skinless, diced
- 1 can cream of chicken soup, low sodium
- 1/2 cup green onion, finely chopped
- 1 tsp curry powder
- 1/8 tsp black pepper
- 2 cups cauliflower florets
- 1 cup onion, coarsely chopped
- 1 cup green bell pepper, cut in cubes
- 2 cups zucchini, sliced
- 3 cups brown rice cooked
- Cut chicken into small pieces and place in slow cooker. Add all remaining ingredients except rice. Cover and cook on low setting 6-8 hours. Serve over hot rice, cooked according to package directions.
