Easy Slow Cooker Curry

  • 4 chicken breast, boneless and skinless, diced
  • 1 can cream of chicken soup, low sodium
  • 1/2 cup green onion, finely chopped
  • 1 tsp curry powder
  • 1/8 tsp black pepper
  • 2 cups cauliflower florets
  • 1 cup onion, coarsely chopped
  • 1 cup green bell pepper, cut in cubes
  • 2 cups zucchini, sliced
  • 3 cups brown rice cooked
  1. Cut chicken into small pieces and place in slow cooker. Add all remaining ingredients except rice. Cover and cook on low setting 6-8 hours. Serve over hot rice, cooked according to package directions.
