Recipe: Swiss Chard with Lentils


Swiss Chard with Lentils

  • 1 bunch Swiss Chard (chopped, stalks and separated.)
  • 1 cup cooked lentils
  • 1/2 an onion (chopped)
  • 1 medium tomato (chopped)
  • 1/4 cup crumbled Feta
  • 2 cloves garlic (minced)
  • 1 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • salt and pepper
  1. Add oil, onion and chard stalks to large saute pan and cook over medium-low heat for about three minutes. Add garlic and chard leaves. Salt and pepper to taste. Cover and cook until softened. Stir, then add cooked Lentils and tomato. Gently warm thru. Drizzle with balsamic and plate. Top with feta cheese.
